Tricolore on toast

I had some stale-ish homemade bread, avocado, tomatoes and a mozzarella that needed using up. I will definitely do this again. Took 3 minutes to make. A 3-minute masticatory miracle.

IMG_2422What to use – serves 2

  • 2 door-stop thick slices of brown bread
  • an avocado
  • 3 cherry tomatoes
  • a ball of mozzarella
  • olive oil
  • salt and pepper
  • a couple of basil leaves, torn

How to use it

Lightly toast your bread. You want it so it’s toasted but still springy and soft too. Slicing your own bread will get the best results for this as opposed to pre-sliced bread.

Drizzle olive oil over the toast. Slice your mozzarella, avocado and tomato and pile them onto the bread in that order. Drizzle over some more olive oil, and crush over some sea salt and black pepper.

Eat. (Knife and fork advisable.)
