Strawberry fool

A super easy and pretty pudding for summertime.

What to use – serves 6

  • 350g strawberries
  • 300g double cream
  • 1 teaspoon of sugar
  • half a lemon

How to use it

Wash and remove the stalks from the strawberries – keep six to eight back to decorate. Put the strawberries into a blender and pulse so that they’re fairly broken down. Spoon out a few scoops of the strawberries which you’ll add back in later.

Add the cream and sugar to the remaining strawberries and blend until smooth.

Scrape out into a mixing bowl, add back in the part-pulsed strawberries. This gives it a fresher taste and a more interesting texture. Stir well, and add squeeze of lemon to taste. Spoon into individual dishes and decorate with sliced strawberries on top.

Can be made in advance and chilled.
