I like to think of these as mini cheese omelettes parading as something healthy because of the association with the words “spring” and “green”.
They are quick, easy and [insert another word for ‘delicious’ as I’m bored of using that]. Once fried, you can put them on a baking tray in a warm (100 degree) oven and they’ll keep until you want to eat them. A very good pre-dinner snack if you find you’ve run out of Quavers. It happens to the best of us.
What to use – makes 4 fritters
handful of spinach
handful of basil leaves
4 eggs
40g grated mature cheddar
pinch of salt, grind of pepper
sunflower oil to fry in
How to use it
Beat the eggs, then add the salt, pepper, spinach, basil, grated cheese, and stir well.
Heat the sunflower oil in a non-stick frying pan to a fairly high heat. Add the mixture to the pan a ladle at a time, cooking for 2 mins on 1 side, and flip for 2 mins on the other.
