10-minute pasta – pea, spinach and salmon

Quick, easy, light, healthy, and tasty. Also a name I’m putting forward for S Cowell’s next boy band.

What to use

  • 70g pasta
  • 40g smoked salmon
  • two handfuls of frozen peas
  • handful of spinach
  • olive oil and lemon juice to serve

How to use it

Put your pasta on to boil – my pasta takes 10 mins. Wash the spinach and leave it in the colander.

When the pasta has been on for 6 minutes, put the peas in with it. Turn the heat right up so it comes back to a boil asap, and cook until the 10 minutes are up.

Drain the pasta and peas over the spinach. Drain well as extra water will be released from the spinach. Put back into the pan, add a good pinch of salt, glug of olive oil, squeeze of lemon, and the salmon. Stir well.
