Smoked salmon pancakes
Pancakes, smoked salmon, cream – what’s not to love.
What to use – serves 2, or 4 as a snack/starter
- 100g flour
- 2 eggs
- 200g smoked salmon
- 100ml milk
- dill
- salt
- creme fraiche
- olive oil for frying
How to use it
Make your pancake mix. There are loads of ways to do this so just choose your favourite way. I did eggs in flour, pinch of salt, added milk until I got the consistency I liked. Chop up half of your salmon and half the dill, and add it to the mix. Put a frying pan on to a medium-high heat with some olive oil in, and ladle the pancake mix in. Put them into the oven to keep warm while you make the rest.
Serve with the other half of the salmon, a dollop of creme fraiche, the rest of the dill (or chives?) if you fancy it, and a squeeze of lemon.
