Easter weekend cooking

The weekend started with easter eggs. Fried on toast.

On Saturday, we had the same as last weekend: scallops and white pudding, paella (without chicken this time as I forgot to defrost it but I’m not sure anyone noticed).

Followed by an apple and pear tart…  which, this time, was devoured entirely.

Then slow roast lamb with carrots, leeks and onions braised beneath the lamb, and roast spuds…

Today was another frittata for breakfast, and lunch was a Mary Berry pasta with prosciutto, mushrooms, creme fraiche and parmesan. It was lovely – thanks Mary. And the first time eating outside of 2015.

And now I’m going for a little nap…
