Fried egg veggie bowl

Bowl food. Little piles of healthy things that go together well. The opportunities are endless.  This one’s a simple mix of spiced vegetables, nutty brown rice, a splash of salty soy, creamy hummus and a crispy fried egg on top. Warming, nourishing, healthy, easy.

What to use – serves 1

  • brown rice
  • handful of edamame beans
  • a carrot
  • half a courgette
  • hummus
  • an egg
  • olive oil / sunflower oil
  • soy sauce
  • a clove of garlic, thinly sliced
  • 2cm ginger, chopped
  • juice of half a lemon

How to use it

Boil the brown rice – it usually takes 20-30 minutes.

When the rice almost ready, heat some olive oil in a non-stick frying pan (medium heat) and add the sliced garlic and ginger.

Wash the carrot and courgette and then using a vegetable peeler, peel them into the pan. Stir well into the garlic and ginger, squeeze over the lemon juice and leave to cook through for about five minutes.

During this time, boil the edamame beans and fry your egg.

Fill the bowl with the rice, the edamame beans, the carrots and courgette. Add a dollop of hummus. Top with the fried egg and add soy sauce to taste.
