Mackerel burgers

I have wanted to do a fish burger for a while now. Today my energy levels were low and I had smoked mackerel in the fridge: cue easy fish burgers. These were soooo quick and simple to make. The result was very light and delicously lemony. I will definitely make these again. The fish is oily so this is quite high calorie-wise, but v good for you.

What to use – serves 1

  • 100g smoked mackerel
  • 60g soft breadcrumbs
  • 10g parsley
  • juice of 3/4 a lemon (you can use the rest to serve / on a salad)
  • an egg white

How to use it

Break up the mackerel into big chunks, and put it with all the other ingredients into a blender and pulse until combined – but not liquidised.

Scrape out the mixture, flour your hands and roll into two patties.

Fry on a medium heat in olive oil for approx 3 mins on each side.
